Low Fat Tomato Soup

The cooler days of fall are here and there is nothing I love more right now than curling up with a warm bowl of tomato soup!  Tomato soup is yummy and simple, and if you make it correctly, it can be super low calorie.

You can make a delicious meal with tomato soup and a low-cal grilled cheese (made, of course with no-fat or low-fat cheese) and low-cal wheat bread.  Yummy!

I used to eat pre-made canned soups, but I don't anymore – which brings me to my biggest problem with canned soups.  Sure they are convenient, but they are also very, very high in sodium, which makes them a bad option for those who are looking to control their salt intake. Also, even more disturbing is that the aluminum containers many soups come in are usually made with BPA, which is also something on my "must avoid list" (BPA is outlawed in most countries other than the US). So, I've started making my own soup – after all, what’s better than being able to control the ingredients that you use and also to choose whether or not to use salt?

The following soup recipe has just 72 calories (yep only 1-2 weight watchers points) per cup and is very inexpensive (and fast) to prepare.

Yummy Homemade Tomato Soup
32 ounces strained tomatoes (buy it in a jar to avoid BPA)
2 medium onions, chopped
3 cloves of garlic, minced
10 cups tomato juice
1 tablespoon dried basil

Sautee the garlic and onions until they are tender; at this step, I use Promise Buttery Spread for sautéing.  In large stock pot, place tomatoes and tomato juice and cook on medium heat until boiling.  Reduce heat and allow to simmer for five minutes, adding the basil, onions, and garlic (and a dash or two of Mrs. Dash if desired).  Remove from heat and serve.  You can also place the mixture into a blender and blend for a smoother texture.

Some optional toppings include: a dollop of low fat sour cream, some shredded low fat cheese, or even some dried toasted bread pulled into small pieces and dropped into the soup (my personal favorite topping).

But aren't the canned tomatoes using the same chemical in their cans?

Hi Susie,
Thanks for pointing out that it slipped in. It was written on my recipe that way. Definitely buy tomatoes in a glass jar. You are right about the BPA in the cans. Very bad. Thanks again!
