Low-Calorie Trail Mix Bar Recipe

Trail mix bars are oh, so good, but they are often laden with fat and calories, making them a bad choice for those of us who are watching our diet. Today, I thought I’d share this delicious low-calorie and ultra-healthy trail mix bar with you.

Yummy Low-Cal Trail Mix Bar
1 cup dried fruit (you can use raisins, cranberries, prunes, or other favorites – and I sometimes use a mixture of different dried fruits)
4 cups of dry oatmeal
1 cup your favorite bran flake cereal
2 tsp. cinnamon
1 tsp. nutmeg
1 ½ cups fruit juice (orange, pineapple, or other – I like to use the juice that includes pulp)
½ cup wheat germ
1 peeled, chopped apple
2 tbs. vanilla
¼ cup brown sugar

Preheat oven to 350 degrees.  Soak the dried fruit for around fifteen minutes in water and then drain.  Combine all ingredients, and spread thinly on cookie sheet.  (You may need to use two sheets, depending on size).  Bake for around 45 minutes or until the mixture is crunchy when you stick it with a fork; allow to cool and cut into bars.  This should make 40 servings.  Each bar contains just 110 calories and has 1.4 grams of fat, no cholesterol, and 3.7 grams of protein. 

This is a great take-along snack.  I love to double this recipe and make extra for later on.   You can invariably store any unused portions in a Ziploc bag for a couple of weeks, or freeze a batch or two of this up for use later on.
