Bananas in Low Calorie Caramel Sauce (Bananas Foster)

low calorie caramel sauceI am a huge fan of dessert, and I think one of my biggest weaknesses on dessert menus is caramel sauce. I've recently taken to cooking my fruit in order to make delicious desserts (see my posting on warm cinnamon apples). So, I decided to see if I could come up with a low calorie recipe for bananas in caramel sauce leveraging a healthy butter alternative. Luckily, I was successful and I'm super excited to pass this recipe along. I hope you enjoy it as much as I've been enjoying it!


Ingredients (serves 2)
:
- 2 medium size bananas
- 1 teaspoon of promise light buttery spread
- 1 teaspoon of canola oil
- 1 teaspoon of honey (or maple syrup or agave syrup)
- 2 teaspoons of brown sugar
- 1 tablespoon of almond milk (or lowfat milk)
- 2 tablespoons low calorie whipped topping (to taste)

Instructions
- Combine buttery spread, canola oil, honey and brown sugar in a saucepan over medium heat
- Stir over medium heat until sauce thickens (approximately 3 minutes)
- Add almond milk and stir until sauce is smooth
- Put saucepan aside, but keep warm
- Cut each banana into halves, and then into quarters lengthwise
- Coat the banana slices with cooking spray
- Place bananas in a pan and cook on medium heat until they are browned evenly
- Remove bananas from pan and separate bananas into two portions
- Pour caramel sauce evenly over each portion
- (Optional) Add whipped topping

In terms of calories, each serving comes out to approximately 156 calories, 3.5 grams of fat, and 3.1 grams of fiber, so 3 weight watchers points. Tastes delicious and is much better for you than what you'd get at a restaurant.

oh juliet. this looks awesome. bananas are my fav food in the world!! i eat them like a monkey. i bet this would be delicious with plantains, too. they fry up really nice.

Have you ever tried roasted bananas? We found them in some crazy babyfood cook book and they are soo good without any of the extra calories. Just take the banana whole (don't peel it) and put it in the oven @350 for 20 minutes, take them out and with a careful hand and some forks peel the edge up and put over frozen yogurt and YUMMMMMM
